WHY DO YOU NET ROASTS? We use netting on roasts like this beef round roast as it helps the meat retain its shape and cook more evenly. The netting helps keep the meat compact and prevents it from flattening out during the cooking process. This is especially important for larger cuts of meat, like roasts, which can be difficult to handle and can fall apart during cooking.
